Cognac is a type of brandy which is a spirit made from the distillation of wine. There are a number of legal requirements in place which must be met for the drink to qualify as Cognac. It is produced in the wine-growing region surrounding the town of Cognac, from which the drink takes its name. The grapes must be of a certain variety and the brandy itself must be twice-distilled in copper pot stills and aged for at least two years in French Oak barrels. Cognac is a premium class of brandy and most are aged for well-beyond the legal requirements.
